Solkadhi Recipe | Sol Kadi - Kokum Curry
SOLKADI RECIPE | AUTHENTIC KOKUM CURRY FROM KONKAN COAST
A refreshing pink digestive drink from the Konkan coast - cooling, tangy, and absolutely addictive!

INGREDIENTS:
- 3-4 tablespoons Kokum Agal (kokum concentrate)
- 1 cup water (for mixing Kokum Agal)
- 1 cup fresh coconut, grated
- 1/2 cup water (for grinding)
- 2 green chilies
- 3 garlic cloves
- 2 tablespoons fresh coriander leaves, chopped
- 1/2 teaspoon cumin powder
- 1 teaspoon salt (or to taste)
- 2 cups cold water
INSTRUCTIONS:
STEP 1: PREPARE KOKUM EXTRACT (2 minutes)
Mix 3-4 tablespoons of Kokum Agal into 1 cup of water. Stir well until the concentrate dissolves completely. Set aside. (No soaking or straining needed - that's the Kokum Agal advantage!)
STEP 2: MAKE COCONUT MILK (5 minutes)
In a blender, combine grated coconut, 1/2 cup water, green chilies, and garlic cloves. Blend into a smooth paste. Add a little more water if needed.
STEP 3: STRAIN COCONUT MILK (3 minutes)
Strain the coconut mixture through a fine sieve or cheesecloth, squeezing well to extract all the coconut milk. You should get about 1 cup of thick coconut milk.
STEP 4: COMBINE EVERYTHING (2 minutes)
Pour the coconut milk into the Kokum Agal mixture. Add chopped coriander leaves, cumin powder, and salt. Mix well.
STEP 5: ADJUST CONSISTENCY (2 minutes)
Add 2 cups cold water gradually until you reach your desired consistency. Solkadi should be thin and drinkable, not thick. Taste and adjust salt if needed.
STEP 6: CHILL AND SERVE (30 minutes)
Refrigerate for at least 30 minutes before serving. Serve chilled in small glasses. The vibrant pink color and cooling taste make it perfect after spicy meals!
